Fast casual chicken salad restaurant opening in Denver Tech Center. Grand opening celebration with free chicken salad for a year to first 100 guests. Owned by Maureen McFerson with support from husband Luke Hadden.

160-room hotel planned as part of National Western Center expansion. Part of $812 million construction phase that includes equestrian center and parking garage.

Blazing Bird

Second Blazing Bird location in Aurora, ninth overall location for the Nashville hot chicken chain. Owner Artem Muradyan expanded rapidly in 2025 with three new locations. No specific opening date announced yet.

Zodiac Subs

Second location of New York-style sandwich shop with Zodiac-themed sandwiches. Larger space will offer additional seating compared to original takeout-focused location. Opening pending city approval.

Longmont Indian Kitchen

Contemporary Indian restaurant by veteran chef Sheel Joshi, featuring authentic dishes including chicken Mangalorean. Small 18-seat space focused on take-out, located in former temp agency building.

In-N-Out Burger

In-N-Out Burger has submitted a concept review for a new 3,890-square-foot drive-through restaurant with 1,400-square-foot outdoor patio in Broomfield. Single-story Spanish-Mediterranean building design consistent with chain’s structures.

Velvet Lasso

Italian-inspired bakery and cafe with femme spaghetti western theme, celebrating grand opening on Valentine’s Day. Also planning to open an adjacent bar and lounge on April 20, 2026.

520 Grill

520 Grill owner Troy Selby was selected by Aspen City Council to take over subsidized restaurant space. Moving from current location at 520 E. Cooper Ave. Proposed opening within 30-45 days of executing lease and finalizing permits.

Navajo Hogan

Historic restaurant and roadside attraction reopening after being closed since May 2021. Features dive bar, comfort food, and music venue with renovated interior spaces and event pavilion. Menu includes fried chicken, fry bread, burgers, steak, and fish and chips.

White Elephant Aspen

Luxury hotel that has delayed opening twice, originally scheduled for late fall 2025, then February 2026. Online booking shows availability starting June 2026. Waiting for custom-made pieces essential to hotel experience.
