Brazilian coffee chain opening 14th location in Vancouver, WA, replacing shuttered Starbucks. Serves single-origin beans, açaí bowls, and Brazilian cheese bread. Hours will be 7am-7pm Mon-Sat, 8am-6pm Sun.

Danji Korean Cuisine

Korean restaurant opening second location on Mercer Island, joining flagship in Issaquah. Menu features authentic Korean dishes including BBQ, bibimbap, Korean fried chicken, and hot pots. Liquor license recently approved.

Ember Goods at the Filling Station

Ember Goods is taking over Filling Station Espresso, renaming it to Ember Goods at the Filling Station. Will focus on coffee with expanded menu including grab-and-go options and breakfast burritos. Pacific Northwest-inspired shop featuring clothing, art and coffee.

Houston TX Hot Chicken

Houston TX Hot Chicken (HHC) will open its first Seattle location on Denny Way with a grand opening celebration. The fast-growing hot chicken brand will feature Nashville hot chicken sandwiches, salads, loaded fries, tenders, and waffles. Opening day includes free food for first 250 guests and a $1,000 spice challenge.

Gather Juice Co.

Gather Juice Co. is reviving its Tacoma location with new business partner Clayton Bray after closing in December. The juice bar will offer the same menu of juices, smoothies, acai bowls and toasts with plans to expand the menu in the future.

Sonora Carne Asada House

Mexican restaurant expanding to second location in Seattle’s Hillman City neighborhood. Known for carne asada, al pastor tacos, and Sonoran-style dishes. Already operates flagship in Auburn plus food truck and pop-ups.

Xi’an Noodles

Xi’an Noodles is planning to expand with two new locations in Seattle’s Chinatown-International District and University District. Owner describes both spaces as ‘turnkey’ and could open in 2-3 months once leases are secured.

Saigon 6

Vietnamese restaurant operated by Kane and Kyle Hwang, featuring authentic Vietnamese fare including pho. Interior has high ceilings, large windows, and vibrant mural with cultural elements. Liquor license recently approved.

Wilson Patisserie

Wilson Patisserie is one of several businesses that have signed leases to occupy the new McCormick Village Retail center. The retail center is a 30,000 square foot development with completion of some buildings expected by late summer 2026.

Prairie View Station

42,000 square-foot food cart pod with beer garden by Trap Door Brewing. Groundbreaking started in February 2026.
